We’ve got half a miso maple glazed aubergine and some crispy miso/soy tofu, served with roasted sea salt asparagus tips and basmati rice w chilli flakes •For the miso glaze mix approx 2 tbsp sesame oil/1 tbsp soy sauce/2 tbsp maple syrup/1 tsp miso paste/1 garlic clove •Score aubergine and roast w half of the glaze for approx 25 mins, adding salt/pepper asparagus tips for the final 10 mins •Pan fry the tofu in the remainder of the miso glaze + 1 tsp cornflour . Air fry at 350F for 16 minutes! Smoked Paprika Gnocchi: Toss the Trader Joe’s Cauliflower Gnocchi in EVOO, salt, pepper, garlic powder, smoked paprika and cook in the air fryer at 400F for 12 minutes. Enjoy! . Seared salmon with grilled asparagus and cheesy baked cauliflower gratin is the kind of dinner I want to cozy up to after a looong day! 🥰💯 - CHEESY BAKED CAULIFLOWER GRATIN 🍚 1 lb cauliflower (about 4 cups)• 3 T ghee (or butter)•1 T almond flour •1 T coconut flour•1 1/4 cup milk(dairy or dairy free)•1/2 tsp salt•1/4 tsp garlic powder•1/4 cup parmesan•black pepper to taste•1 cup white cheddar cheese (any sharp cheese will work) 1) Preheat oven to 350 F. 2) In a large pot with a steamer inserted, steam cauliflower, until tender (about 5-7 min). While the cauliflower is steaming, melt the ghee (or butter) in a medium pan over medium high heat. Once melted, add the almond flour and coconut flour, and whisk until it begins to brown (about 1 minute). 3) Add the milk, salt, garlic powder, onion powder, and pepper; whisk until smooth and then bring to a boil. Once boiling, reduce heat and simmer until very thick (about 6-8 min). 4) Remove the milk mixture from heat and whisk in parmesan and 1/2 cup of the cheddar cheese. 5) Spread half the cheese sauce in the bottom of an 8x8 inch pan. Add the cauliflower and pour the rest of the sauce on top. Sprinkle with remaining cheese. Bake 25-30 minutes, until golden and bubbly. . Credit: @sara.haven

Credit @thishealthytable⠀ ~⠀ Ingredients⠀ 2 tablespoons olive oil, divided⠀ 4 (6-ounces) salmon fillets⠀ 1 medium yellow onion, diced⠀ 2 cloves garlic, minced⠀ 3 cups baby spinach⠀ 1/3 cup crumbled feta⠀ 1 teaspoon kosher salt⠀ optional topping - microgreens⠀ Instructions⠀ Preheat the oven to 400 degrees F (200 C).⠀ Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.⠀ Sauté the onions and garlic for 3 to 4 minutes, or until the onions are translucent.⠀ Add the spinach and cook for 30 seconds or until wilted. Remove the pan from the heat and stir in the feta.⠀ Flip the salmon fillets on their side and cut lengthwise through them to create a pocket.⠀ Divide the spinach mixture into four equal parts and stuff each salmon fillet.⠀ Drizzle the fillets with the remaining olive oil.
