At this point my blood type is probably pumpkin spice but pumpkin spice REALLY does make everything nice🍂🍁so here is how to make it: ~ mix 4 tsp of cinnamon with 2 tsp of ground ginger and 1/2 tsp of ground nutmeg! Tip: I always use organic cinnamon from @bioplanet_be, organic cinnamon is seriously a game changer!!! . PUMPKIN SPICE GRANOLA 200 g oats 140 ml maple syrup 60 ml melted coconut oil 200 g pecans 3 tbsp dried apples, chopped (optional) 3 tsp pumpkin spice • Ground 30 g of the oats in a blender. • Mix all ingredients (except for dried apples) in a bowl. • Transfer to a large baking tray lined with parchment paper. Distribute it well over the entire tray. • Bake in a 150°C preheated oven for 25 minutes. Stir the granola and bake for another 15 minutes. • Remove from the oven and stir again right away. • Let it cool completely and stir in dried apples. Store in a jar or airtight container. Confession time: blame it on my hormones but when I'm on my period you'll find me in a dark corner putting chocolate spread and peanut butter on one spoon and licking it off without anyone seeing it 😬 My peanut butter cup brownie is basically a more glamorous version of it and one I won't necessarily eat in the corner 😅 And it's pretty much just as effortless since all you have to do is add water to the @niamhbaking chocolate cake mix and top it with peanut butter cups. I’m too old for trick-and-treating. I only want to treat .... myself to a whole bark of chocolate 👻. . HOW TO MAKE: Melt 300 g of dark chocolate. Pour it in a baking tray lined with baking paper. Let it set in the fridge for 30min. Melt 50 g of white chocolate. Spoon 1 teaspoon of white chocolate on baking paper and use a back of a small spoon to swish it to make a ghost shape. Let it set in the fridge for 15min. Get the ghosts off the baking paper. Glue them on the dark chocolate with a dot of melted white chocolate. Use a back of a skewer or a back of a paint brush to paint eyes and mouth with black food colouring gel. A few ideas with @lepaindesfleurs crackers which I pretty much eat every day (yes yes, gotta balance all those cakes right 😜; Also if you couldn’t find them during lockdown it’s probably because I was hoarding those crackers while others were hoarding toilet paper 🤣). But without further ado 🙃, here is how we love to eat them: - Breakfast: with peanut butter, a scoop of coconut yoghurt, topped with granola and dark chocolate. FER’S FAVOURITE! - Lunch: with a buddha bowl of roasted sweet potato, beets, baked spinach, baked tempeh and beet spread, (great to substitute grains). - 4 o’clock snack or aperitief: with edamame and avocado ‘hummus’ - recipe below: EDAMAME HUMMUS 200 g shelled edamame beans 1/2 ripe avocado 4 tbsp olive oil 60 g tahini 5 tbsp cold water 1/2 tsp salt bunch of cilantro Put everything in a blender and mix. You might have to scrape a few times. {RECIPE} Sunday is for baking (or in my case Sunday is for eating the 3 trays of brownie I had to make for a video shoot on Friday 😬 send help please!!!!) but I wanted to share my fool-proof brownie recipe I’ve been making for years and shared with you before but it really is MY FAVOURITE BROWNIE so I’ll keep sharing till y’all make it 😜. CHEEWY BROWNIE • 130 g melted butter • 200 g caster sugar • 2 eggs • 300 g dark chocolate chips • 100 g all-purpose flour •30 g unsweetened cocoa powder • 1/2 tsp salt HOW: - Mix melted butter with sugar for a minute (by hand or in a mixer). - Add eggs and mix until incorporated. - Melt 150 g of chocolate chips and add it to the batter. Mix. - Add flour, cocoa powder and salt and mix until incorporated. - Add the other 150g of chocolate chips and mix them into the batter. - Line a small baking tray (I use a 24cm x 18cm one) with baking paper (I wet it and crinkle it first). - Bake for 30 minutes on a 170C pre-heated oven. Take out and let cool off. 🕷🕸SPIDERWEB PANCAKES🕸🕷 Because Halloween 🎃 can’t come early enough and because pancakes (no excuse needed right?! 🤪). SPIDERWEB PANCAKES: - 1 very ripe banana - 150 ml oat milk - 150 g flour - 1 tsp baking powder - 1/4 tsp baking soda - oil for baking HOW: • Put all ingredients into a blender and pulse until just combined. Put the batter into a piping bag (or ziplock bag) and snip off the tip (just at the end, you don’t want a big hole). • Heat a pancake pan with oil over medium heat. Pipe out spiderweb on the pan (start with a cross, then add 2 diagonal lines, then make curved arches to close the web on the outside and in the middle). • Bake till small bubbles form on them, flip and bake another 30 seconds. Arrived to school today to pick Fer up to have his teachers tell me that Fer has BIG BIG NEWS for me 🙈 So my child, ladies and gentleman, is off the street as he now officially has a girlfriend who (in his own words) “he has been looking for for the longest time, almost as long as mom was looking for a boyfriend (I’m pretty sure it took me waaaay longer but ok 😂), he can’t stop thinking about, he already misses, he wants to hug A LOT 🤪 and maybe kiss next week”... and now he needs me to take photos of him and send it to her mom. I haven’t been that excited about dinner for a while now 🤤 These spinach pancakes with roasted veggies, baked kale and cashew black garlic sauce are a result of my little trip to @bioplanet_be today (see stories). I’m currently in food coma (the good kind) but I wanted to share the recipe with you 👇🏻 Spinach pancakes: 200 g spinach (i used frozen and heated it up to thaw it) + 150 g flour + 200 ml oat milk + 1 egg or flax egg. Put all in a blender, mix and bake on olive oil 1 minute on each side. . Sauce: 150 g cashews (soaked for 30 min in hot water) + 5 black garlic cloves + 200 ml water. Mix all in a blender. . Kale: briefly baked in a pan with olive oil and salt. . Veggies: 1 butternut pumpkin + 2 beets + 2 chiogga beets. Peeled, cut in wedges, drizzled in olive oil and baked for 45 minutes at 190C.
