Baked Sweet Potatoes loaded with tandoori spiced chickpeas by @cookingforpeanuts 😍 . Ingredients: Chickpeas⠀ Drain and rinse 1-1.5oz can chickpeas. Rub chickpeas with generous amount of tandoori masala seasoning, or substitute with other spices/herbs like smoked paprika, ancho chili, chipotle, cayenne, garlic powder, cumin, chili powder, turmeric and make your own combo. Add salt to taste. Roast at 400F/205C until crispy (about 20 minutes). Use fork to remove a little of the center of 3 baked sweet potatoes (sliced open) and load with chickpeas. .⠀ Easy guacamole⠀ Mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add dollop of guacamole to top of chickpeas and add a drizzle of tahini and red chili flakes.

Think creamy/crunchy + sweet/savory and full-on SUMMERYYY 🤸♀️ The homemade honey-shallot-balsamic vinaigrette *makes* the salad and can be stored for several weeks in the fridge. No burrata? No problem! Swap goat cheese or fresh mozzarella👌🏻. - Salad ingredients 🥗(serves 2) 1 ripe peach, halved and sliced 2 burrata cheese rounds 4 cups arugula 1/4 cup chopped pistachios 1 tablespoon hemp hearts (optional) Olive oil for drizzling Honey Shallot Balsamic vinaigrette ingredients 🧄 1.5 tablespoons olive oil 1.5 tablespoons white balsamic vinegar 1 tablespoon honey 1/2 tablespoon minced shallots 2 teaspoons dijon mustard salt & pepper, to taste For the Grilled Honey Garlic Chicken Skewers: in a medium-sized bowl combine: 2 tablespoons honey 1 tablespoon soy sauce 1/2 tablespoon vinegar 1/4 teaspoon ginger 2 cloves garlic, minced (or 1/2 teaspoon garlic powder) Cut two chicken breasts into 1-inch pieces; add to bowl and marinate for 30 minutes. Thread chicken onto skewers and grill for 5-8 minutes per side, brushing with garlic ghee, as desired - Credit: @sara.haven

Roasted vegetables with tzatziki 🌿 One of the easiest summer recipes to make with any leftover vegetables. I use to cook or grill these vegetables with generously olive oil and 1-2 teaspoons of cumin, paprika, salt and pepper. Baked 35-40 min in the oven at 200C until golden and crispy. ~ Credit: @micadeli_
TOMATOES, HUMMUS, BASIL AND SOURDOUGH TOASTS! 🍅🌿🍋🥖 . Hummus Recipe 2 cups of canned, but rinsed chickpeas 1/3 cup of good quality Tahini 2 tablespoons of extra virgin olive oil Juice of 1 large lemon 🍋 1/4 teaspoon of sea salt or more to taste 1/2 teaspoon of cumin 2-3 cloves of garlic Instructions 🌟🌟🌟🌟🌟 You’ll need a high-speed blender or food processor. First, add the tahini paste and lemon juice and process for ~1 min. It will turn lighter and thicker. Then, add the garlic cloves (always use fresh) olive oil, sea salt, cumin and 1 cup of chickpeas. Blitz for 30 seconds and then incorporate the second cup of chickpeas. Blend until completely smooth. Tip: Slowly add 1 tablespoon of icy water for an even creamier hummus. This last step is completely optional. I like to make a dent in the hummus (once it’s on a plate or bowl) and drizzle olive oil into it. You an also sprinkle sumac or smoked paprika on top for presentation 💁🏻♀️✨ The crusty sourdough was toasted twice and brushed with extra virgin olive oil. Then came the hummus, the heirloom tomatoes, a sprinkle of sumac and flaky sea salt; and one final drizzle of olive oil for the win!⚡️ ~ Credit: @thedishonhealthy

WATERMELON FETA SALAD 🍉 By @sailor_bailey ~ Ingredients: 4-5 cups cubed seedless watermelon ¾ cup chopped feta or goat cheese 1½ cup chopped cucumbers 1½ tbsp chopped fresh basil 1½ tbsp chopped fresh mint 2 tbsp olive oil 1½ tsp fresh lemon or lime juice fresh cracked pepper optional ~ Instructions: In a large serving bowl add the watermelon and cucumber together. Whisk the lemon/lime juice together with the oil and drizzle it over the salad.Mix together. Add in the fresh herbs and feta. Gently mix it together to keep the feta from crumbling too much. sprinkle with fresh cracked pepper before serving!
