I was definitely being far too relaxed giving these 2 brekkie in bed today 👧👶 🛌 let’s just say it was mushy egg central afterwards 🤦‍♀️🤪 I really wanted to get organised & figured this would buy me a few minutes (they had my iPad too so they were living their best Sunday lives!) One of the simplest ways for me to stay fit is to keep it simple & realistic🤗 For years I used resistance bands as a professional track athlete🙌🏼 After I retired I always had them close to hand & have consistently dipped in and out of using them. Looking for the perfect Easter Dinner side? I’ve got you covered!🐣❤️ This quick & colourful CousCous Salad is the perfect side for any dish - it’s amazing with the lamb tagine I shared yesterday too!🙌😊 Make a big batch to have some for a few days! ❤️Press save - this is a staple in my house in Spring/Summer! Ingredients: - 200g couscous - 750ml boiling vegetable stock - 2tsp turmeric - 1tsp cumin - 1tsp dried coriander - ¼tsp cayenne pepper - 1 small red onion, finely diced - ½ red pepper, finely diced - Juice and zest of 1 lime - 2tbsp extra virgin olive oil - Salt and black pepper Method: 1. Place couscous in a large heat proof bowl. 2. Add the spices to the stock and pour the mixture over the couscous 3. Lightly mix with a fork, cover with cling film and set aside for 10 minutes approximately. 4. If the couscous hasn’t absorbed the water or still tastes crunchy after this time, cover and let it sit for a few more minutes. 5. Fluff up the couscous with a fork and mix through the onion, pepper, lime juice and olive oil. 6. Stir to combine everything. 7. Season to taste with salt and pepper 8. Serve warm or allow to cool and store in an airtight container in the fridge. #weekendrecipes #eastersidedish #healthycooking #easterbunny

Happy Saturday!🥰 Who’s ready for the Easter Bunny tomorrow?👀 I wanted to share one of my favourite lamb recipes ahead of tomorrow - lamb tagine. There are certain dinners I cook that I know are bankers. These are the types you want to cook in a big batch and have leftovers for the next day😍 This lamb tagine is one. It ticks the box in so many ways. This tagine recipe is a simple way to make a beautiful dish full of flavour🙌 PRESS SAVE❤️ Serves: 4 Ingredients : - 1 kg lamb pieces - 1 tsp cumin, turmeric and coriander - 2 tbsp ground almonds - 2 tbsp honey - a handful of sultanans - 1 tin chopped tomatoes - 1 tbsp olive oil - 2 onions, finely chopped - 5 cloves garlic, crushed - 1 thumb-sized piece of ginger, grated - a handful of fresh herbs (ideally coriander or mint) - 5 tbsp flaked almonds Method 1. Place the lamb, spices, almonds, honey, sultanas and tomatoes in a large lidded casserole dish. Mix well and set aside. 2. Heat the oil in a frying pan and cook the onions, garlic and ginger for five minutes. If the pan gets dry add a dash of water. 3. Add this mixture to the casserole, stir well and place in the oven (temperature 160 degrees) for at least one hour. Check occasionally. 4. Ladle the cooked tagine into a warm serving bowl. Sprinkle over the herbs and almonds. 5. Serve with cous cous or brown rice. #weekendcooking #easterrecipes #quickandeasymeals #healthymeals

Who’s ready to get baking??👀😍 There is something lovely about the smell of baking at the weekend. Here's a recipe for some yummy Homemade Brown Scones🌟 ❄️These are a perfect option for a snack & what's great is they can be frozen! 🌰These are great as is but are also lovely if you mix it up with some extra ingredients like raspberries or walnuts! Press ❤️ & try these! Serves: 8-10 roughly - 75g whole meal flour - 150g self-raising flour - 25g oats - 1 tsp baking powder - Pinch of salt - 45g butter, cubed - 1 large free range egg - 100 ml ice cold milk, plus extra to glaze 1. Preheat the oven to 180oC. 2. In a bowl mix the flour, baking powder and salt. 3. Add the butter and rub it in using your fingers until you achieve a breadcrumb like consistency. 4. In another bowl, beat the egg with the milk. 5. Pour about 3/4 into the flour mixture and mix together, adding extra egg and milk mix as needed, to form a soft but not sticky dough. Don’t over mix here as the quicker and lighter the mixing, the higher the scones will rise. 6. Tip the dough onto a lightly floured surface and roll out with a rolling pin to 2-2.5cm thickness. Cut to shape with a knife or scone cutter. 7. Place the scones on a lined baking sheet and brush the tops with milk. Bake for 20-25 minutes until risen and golden brown 8. To check they are done, lightly squeeze the sides, the dough should be springy. 9. Allow to cool slightly on a wire rack. 😍These are best enjoyed within an hour or so of baking while still warm. #saveandtrylater #saturdaybaking #weekendactivities #homemadetreats

Chicken & Basil Coconut loveliness!🥰 I can’t believe it’s Wednesday already!🤯 This recipe is super handy for mid week. Its: ✅Healthy ✅Tasty ✅Super fast to make In my house the kids will always eat this too, woohoo!!!!!🥳 Press SAVE😍 Serves 2 Ingredients: - 2 tbsp olive oil - 4 shallots, finely sliced - 2 leeks, trimmed and finely sliced - 1 red chilli, deseeded and finely chopped - 2 skinless chicken breast fillets, cubed - 1 tbsp fish sauce - 1 tsp agave syrup/honey/maple syrup - a handful of basil leaves, torn - 300ml coconut milk - brown or basmati rice, to serve Method: 1. Heat the olive oil in a large pan over a medium heat. Add the shallots, leeks and chilli and cook for about 10 minutes. If the pan gets too dry, add a dash of water. 2. Add the chicken and cook for about 5 minutes, stirring often. Add the fish sauce, agave syrup/honey/maple syrup, basil and coconut milk to the chicken in the pan.
