🍟 Baked Herb Fries with a Beet Garlic Mayo . These are the perfect finger food 🍟🙈 . what’s something you love to munch on? Really in need of more ideas because I’m always just having the usual stuff. 😅 anyway, sharing the recipe for these fries and dip below! I also can’t stress enough that washing your peeled potatoes and soaking them in water is so important before baking because this way you wash out the starch and get crispier potatoes!! Baked Herb Fries with Beet Garlic Mayo Good for 2 2 large (650g) potatoes, I used Yukon gold potatoes 1 tsp rose salt 1 tsp dried basil or chopped fresh basil 1/2 tsp dried rosemary 1/2 tsp dried parsley Sprinkle of pepper Drizzle of olive oil Beet Garlic Mayo 1/2 cup vegan mayo 2 cloves garlic, minced 1 tsp beet powder, diluted in 1/2 tbsp hot water Dash of pepper Salt to taste Heat the oven or oven toaster at 350F. You can also air-fry these! Wash and peel the potatoes. Slice into 1/2-inch pieces and wash through water. Soak in room temp. water for 10 minutes. This is to remove the starch and get the potatoes crispier! Mix the potatoes with the salt, herbs, salt, pepper, and olive oil. Place on a lined baking tray. Baked for 35-40 minutes, flipping halfway through, or until golden brown and crisp. For the mayo dip, simply mix everything together until well incorporated. Adjust seasoning based on your desired taste. Enjoy! . 5-minute veggie packed creamy pasta sauce 🥦🥬💚 this uses broccoli, peas and rocket for a hit of vitamin c, vitamin a, manganese, potassium, and b vitamins, making it super nutrient rich and amazing for our gut health 🙌. ⠀ (serves 2-3) - 2 cups broccoli florets - 1 packed cup leafy greens (i used rocket but you could also use spinach, kale, salad leaves, whatever you have to hand) - 1/2 cup frozen or fresh peas - 1 cup cashews - 1.5 cups pasta water - 1 heaped tsp flaky sea salt - 1 large garlic clove - 1/4 cup nutritional yeast (optional, but good for plant protein) ⠀ steam the florets for a few minutes (you can also roast or boil them if you prefer) until slightly soft but still vibrant green. drain and add everything to a blender. blend for 1-2 minutes until silky smooth (add more pasta water if necessary). pour generously over gluten free pasta and top with cracked pepper, lemon juice, and sweet cherry tomatoes. enjoy friends! Blended Flavors Chopped Salad 🍓🥒🍅 A Super QUICK - yet, totally unique chopped salad PERFECT for your weekend get-togethers. All the different Blended Flavors happening here in this salad are surprisingly phenomenal together! If you prefer using different herbs or cheese - ANY type of crumbly cheese or herbs you have on hand will taste great! Cucumbers are low in calories and contain a good amount of water and soluble fiber, making them very hydrating and great for weight loss and overall health. Cucumbers are in the top 10 for high pesticides, and are on the Environmental Working Group's "Dirty Dozen" list, designed to help us quickly decide which produce should be purchased USDA organic. I recommend that the cucumbers you eat be organic, or local garden grown if possible. This salad is best enjoyed within a few hours of preparing. makes about 4 servings Ingredients: 2 cups strawberries, hulled and halved 1 pint cherry tomatoes, halved 3 garden crisp cucumbers, chopped 1/2 small red onion, thinly sliced a small handful of fresh mint, leaves picked a small handful of fresh cilantro, leaves picked Toppings: 4 Tbsps pine nuts 4 Tbsps crumbled feta cheese Dressing: 1 Tbsp Dijon mustard 4 Tbsps extra-virgin olive oil 1 Tbsp raw honey 1 fresh garlic clove, minced 1/2 tsp sea salt 1/4 tsp ground pepper Instructions: In a small bowl add all dressing ingredients. Whisk really well, until emulsified. In a medium bowl combine all of your prepped ingredients for the salad. Drizzle your dressing and gently stir to coat. Sprinkle with toppings and serve! .
