Another quick and easy not to mention cost effective meal (can be served as a main meal or add your favourite sides of protein tofu, fish, chicken or beef etc...) Cook quinoa as per packet instructions. Quinoa is gluten free and perfect for people with gluten intolerance, it’s very high in protein, with all the essential amino acids. Finely dice red capsicum (high in vitamin A and C) onion (high in antioxidants) add corn 🌽 which is high in fibre. Corn also provides our bodies with essential minerals such as zinc, magnesium, copper, iron and manganese. Grill your favourite cheese (I used a vegan haloumi) mix all the ingredients with kale 🥬 excellent source of vitamin C and K, sprinkle some sunflower or pumpkin seeds (very high in magnesium and antioxidants) drizzle it all over with a beautiful olive, macadamia oil, lemon juice and salt and pepper. Garnish with avocados 🥑 did you know they contain more potassium than bananas? Plus the most abundant nutrients in a single serve eg: vitamin K, C, B5, B6, E and folate. So there you have it!
