PANG PANG CHICKEN SALAD. Thank you for letting me share this mouth tingling recipe with you @kingswaycitysc 🤩 here is my recipe for those of you who couldn’t make it: 1 litre chicken stock 1 tbsp shaoxing cooking wine 500g chicken maryland (de-boned) Spicy Sesame Sauce 3 tbsp tahini 2 tbsp light soy sauce 1 tbsp Chinese black vinegar 2 tsp caster sugar 2 tsp sesame oil 2 tbsp chilli oil Salad 2 spring onions, thinly sliced 1 handful of coriander sprigs 1/2 cucumber, cut into matchsticks 1/2 carrot, cut into matchsticks 1 handful bean sprouts 1 tbsp roasted peanuts Chilli oil, to serve Place the stock and Shaoxing cooking wine in a saucepan and bring to the boil. Place chicken in pot and lower heat to simmer. Poach until just tender, about 15 – 20 minutes. Remove from the stock and let cool. Whilst cooling, mix all ingredients for the spicy sesame sauce. Loosen with 2 tablespoons of the chicken stock if necessary. Beat the chicken lightly with a rolling pin to loosen the fibres and using your fingers, shred the chicken into long strips along the grain. Transfer to a serving plate, add the salad ingredients and toss to combine. Drizzle generously with the spicy sesame sauce and sprinkle with roasted peanuts and extra chilli oil if desired.
