Shrimp with Potato Curry π¦

My baby turned 3 Alhamdulillah π He loves strawberries so this is my attempt at the Victoria Sponge Cake with plenty of strawberries! And more strawberry desserts too π πππ Ps. I can cook 10 curries but baking is definitely not my thing, plays havoc with my Ocd and way too much washing up to do after! π To all you professional bakers out there, i fully respect your grind! ππ

Kheski Maas with Orange Peel ππ Recipe taught by my mum ππ₯ 1) In a pan, add 2 tbsp of oil, 5 cloves grated, cook on low heat until golden 2) Add 1 small onion finely chopped & 2 green chillies sliced. Salt to taste. Cook on medium heat for a few mins, then add a splash of water. Cover and cook until onions soften 3) While thats cooking, prep the fish and be sure to clean it thoroughly! 4) Now add the spices, 1 tbsp chilli powder, 1 tsp coriander powder & curry powder and 1/2 tsp tumeric. Add a splash of water, cover and cook for 10 mins or until the oil rises to the top. Then mash the masala. 5) Now add the small pieces of orange peel. I used 1 clementine peel, typically dried beforehand but you can also just peel an orange and add it straightaway. Taste wise it's the same. Also add half cup of water and cook until peel softens. 6) Add the fish, 2 green chillies. Mix gently once and don't use a spoon after that, just shake the saucepan instead as the fish is very delicate and will break. Can add more water at this point but this dish tastes better with less water so be careful not to add much, i only added a splash. Cook for 10 mins on medium heat. 7) Garnish with coriander & enjoy!

Spicy Chicken, Spinach & Mushroom Fried Rice ~ work days are manic and i have 30 mins to eat & go for school runs. This is my go-to quick healthy & fullfilling meal ππ πΆππ Recipe below π and yes that's my husbands bike which he believes is too special to park outside and instead it's taken over my kitchen π So i'm using it as a prop for my pics, as promised π because #instagram is a place for doing wierd & wonderful things right! π Recipe: 1) In a pan, use spray oil then add 1 grated garlic clove, handful of chopped red onions, mushroom, spinach, green chillies, red pepper, tomato & any other veg. Season with salt, pepper, mixed herbs & chilli flakes. Yes everything goes in together bcos it's a quick recipe! Cook on medium heat 2) Add a splash of water if it drys out. Then add 1/2 tsp curry powder, chilli powder & a pinch of tumeric. 3) Add 1 tbspn dark soy sauce, squeeze of lemon juice, tomato puree and 1 tsp of naga pickle - only add this of you can handle it π₯ 4) Add cut up chicken , i used @najmafoods chicken & herb slices which is precooked & delicious! 5) Move everything to one side, add 1 whisked egg, season with salt & pepper then mix continuously until scrambled 6) Add cooked rice & mix. Cook for few mins 7) Garnish with coriander & enjoy!

BBQ Chicken & Beef Skewers using @regalfoods marinade sauce. If you've seen my story today, you'll know I've always made marinade from scratch. So trying a ready made one was going outside territory for me π And I was pleasantly surprised! Full of flavour, aroma and i also like the little pieces of whole spices in it, that gave me confidence that it would be nice. It was the right level of spicy tooπ Defo thumbs up from me, I'll be using it more often now ππ
