Warm up your tastebuds and soul with this perfect fall comfort pasta recipe by @ImSoEunique Spinach, Mushroom & Sausage-Stuffed Pasta Shells with Pumpkin Cream Sauce Filling 1 lb ground pork, turkey, or beef 1 Tbsp fennel seeds 1 tsp salt, plus more to taste 1 tsp black pepper, plus more to taste 1 tsp onion powder 1 tsp garlic powder 1 tsp paprika Drizzle of olive oil 6 oz baby bella mushrooms 2 handfuls fresh spinach Pumpkin Cream Sauce 1 Tbsp unsalted butter ½ shallot, finely chopped 2 cloves garlic, minced 1 cup pumpkin purée 1 cup chicken broth 1 cup heavy cream 1 tsp salt 1 tsp black pepper Assembly 1 box jumbo pasta shells Salt, for boiling ½ cup Mozzarella cheese Preparation -In a 9 inch pan over medium heat for 2-3mins, brown the ground meat. Stir in the fennel seeds, salt, pepper, onion powder, garlic powder, and paprika. Stir occasionally for 5-7 mins or until the meat is fully cooked, then remove from the pan. -In the same pan, heat a drizzle of olive oil, then add the mushrooms and season to taste with salt and pepper. Cook for 5 mins. -Add the spinach and cook for 2-3mins. Then, add the ground meat and stir to combine. -Make the pumpkin cream sauce: Melt the butter in a medium saucepan over medium heat, then add the shallot and garlic and sauté for about 1 minute. -Add the pumpkin purée and stir for 1 minute, then pour in the chicken broth and stir until smooth. -Add the cream, and stir until the sauce comes to a boil. Season with the salt and pepper, then remove the pot from the heat. -Bring a large pot of salted water to a boil. Add the shells and cook according to the package instructions until al dente. Drain and let cool slightly. -Preheat the oven to 350°F (180°C). -Coat the bottom of a 9 inch baking dish with a layer of pumpkin cream sauce. Fill each pasta shell with the meat mixture, then place in the baking dish. Top with the remaining sauce and mozzarella cheese. -Bake the stuffed shells for 10 minutes, or until the cheese is melted. -Serve warm. Enjoy!
