Al Fresco Dinner… with a view 🥂 FENNEL POACHED SALMON WITH HEIRLOOM TOMATO SALAD // inspired by @gbchefs Salmon 🐟 + Poaching Liquid: Water, Lemon Juice, White Wine, Celery, Onion, Fennel Seeds + Lemon Wedge Tomato Salad 🍅 Heriloom cherry tomatoes (mixed colours), Avocado, Capers, Shallots, Xeres Vinegar, Olive Oil, Basil, fennel seeds, S + P Dill Potato Salad 🌿 Fresh Dill, baby potatoes (warm or cold), shallots, old fashion mustard, xeres vinegar, capers, olive oil, s+p INSTRUCTIONS 👩🏼🍳 Bring to boil all the poaching liquid ingredients and add the salmon filets for 10-12 min Let it cool down and remove the skin. Cut the tomatoes in quarters or half and add all the ingredients to make the salad. Do the same for the potato salad (use warm or cold cooked potatoes) Serve the Poached salmon filets, warm, over a scoop of the tomato salad. Add a bit of the poaching liquid on top to warm it up and leave a few celery and onions cubes overs. Serve with a basil leaf on top, s+p and add a lemon wedge. Easy Make-Ahead and Budget Friendly Recipes 🍳 students, thank me later ;) Haven't made frittata in forever but just found this old photo and I'll def make a batch this week. If you're doing meal prep, need easy and quick lunch/dinners that you can make ahead and that are budget friendly or just if you have veggies that are gonna go bad, frittata is the answer! Perfect for students or if you din't have time to@cook during the work week. It works with whatever veggies you have, play with different combinations! Onions, mushrooms, bell peppers, tomatoes, zucchini, spinach, leeks, brussel sprouts, even potatoes, etc... STEP 1 🥒 Cook the veggies in a pan for few minutes (they don't need to be fully cooked as they will go in the oven after) and add them into an oven-proof skillet or baking dish. STEP 2 🥚 whisk 10-12 eggs (add more if only using egg whites) with a touch of olive or avocado oil, herbs of choice (oregano, thyme, Italian herbs mix, basil,use what you like!) salt and pepper and spread it all over the veggies (make sure it's equal everywhere in the baking dish or skillet). STEP 3 (optional) 🧀 i like to sprinkle my frittata with feta cheese/cubes! I also add some fresh cherry tomatoes on too and spinach. I toss in some more fresh herbs as well at the end. STEP 4 🔥 Preheat the oven at 375°F while making the frittata and when ready, bake it for about 45 mins. Let it cool down before eating! It stores well in the fridge and you can keep it for the whole week. Never tried freezing it but hear you can. Enjoy 🌿 #mealprepideas #quickrecipes #makeaheadmeals
