The experience of the wines of @churchandstatewines a has concluded and my impressions are now on MyVanCity.ca with the link in my bio. It was a journey not to be rushed. I have been tasting, enjoying, and especially savouring, the wines of Church and State since they arrived at my front door almost two months ago. Yes, I take my time to truly appreciate the expression of each individual wine. Every wine has it’s own characteristics and well, frankly, some things should just not be rushed, especially the wines of Church and State. This first photograph was taken around the time the wine arrived. An early morning with the sun doing its best to break through the foggy skies. An Argentinian transplant who started his career in the wine industry first in California, next Chile, then back to California which brings us to the BC Okanagan. Cilley tells me his appreciation for wine began as a teenager in Argentina. "A setting where you learn to appreciate wine from an early age, there is a positive association. Suggested wine pairing: TERROIR COLLECTION SPLITRAIL 2014 MERLOT Our Splitrail Merlot hails from the eastern region of Osoyoos where some of the longest hangtime occurs. This additional time on the vine gives the grapes a deep colour and intensity that translates into a robust wine. French oak barrel aging provided additional depth and complexity in the extended finish. This wine is enjoyable now, or cellar for the next 5-8 years. A splitrail denotes a fence or enclosure made from pieces of wood split lengthwise from the log. We named this wine, Splitrail Merlot, as a reminder of the many splitrail pieces used to create fences by the early pioneering farmers, especially the orchard growers. The label image illustrates the height aspect of this vineyard. Tasting Notes Black cherry, blueberries, and red plum fruit with dark chocolate and a touch of leather. Solid, refined tannins. Suggested Italian wine pairing: Boggione 2015 Barolo “Brunate” Although 2014 Barolos can be often light and dainty because of the cool vintage, the Barolo Brunate @az.agr.boggione_claudio from one of the smallest producers in the Langhe, Claudio Boggione, is unique for its dark and earthy flavours. - Anna Savino Suggested BC Wine pairing: Little Engine Silver Pinot Noir @littleenginewines Winery tasting notes: Ruby in colour, the aroma is a symphony of ripe cherry and cranberry, with figs and star anise. A vibrant and juicy start on the palate with a slightly savoury character, accented with flavours of dried fruits and cranberry. The wine has a smooth yet firm palate with soft, approachable tannins. Subtle acidity lifts the wine into an intense, lingering finish. Approachable and silky upon release this wine will develop well through 2024 under ideal cellaring conditions. My tasting notes: The Pinot Noir has aromas of eraspberry, boysenberries, light plum, with hard candy scents. The Pinot Noir has medium body, medium tannins and is deliciously smooth with flavours of fresh grape juices. It pairs very well and I found it rich with good acidity. #ThisWineThatDish Picker’s Hut Premium Handcrafted Cider “In this series I will be sharing my take on which BC Wine pairs well with some inspirational recipes” So not wine, this is a seasonal recipe, actually two recipes, that just happens to call for cider. @wardscider BC Cider. The question was which Picker’s Hut/Ward’s cider did I sacrifice for the recipe versus which Picker’s Hut/Ward’s cider did I pair with the dish? The first dish, Winter Squash, would be a nice one with turkey if you're having your bird tonight on Thanksgiving Day, or if like many you've already had turkey dinner this would up the ante on your leftovers. I definitely recommend this dish. @clevercrowfarm @kehlervegetables At the same time I was using an overabundance of mushrooms I had on hand. For the Mushroom Wellington I used a yummy port style wine, Black Brant, from Wild Goose Vineyards. @wildgoosewine and for zing @vumamifoods Umami Bomb Winter Squash braised in Cider Mushroom Wellington Both recipes called for cider so I just had to choose which cider to cook with and which cider to pair with the dishes. The port went into Port Reduction which was an exceptional accompaniment to the Wellington. The recipes are on MyVanCity.ca with a link in my bio. Take away: this was a multistep dish that I narrowed down to not quite simplicity but the main thing you need to know is - make the filling a day or two ahead. Not only does it make prep easier and less stressful the result in flavour boost is out of this world. I know because this dish was 100 times better as a leftover. I would make it again because it is guest worthy but with the filling and port reduction made ahead. The wine pairing: Beaufort Ça Beautage Ça Beautage is a blend of 100% Beaufort-grown varieties; Marechal Foch & Leon Millot. An expressive and fresh wine with aromas of blackberry and blackcurrant. Black fruit on the palate too, finishing with smoky plum. Intense garnet in colour, with soft tannins and an acidity that does not belie our cool coastal climate. #TasteItalia Tagliatelle With Prosciutto and Butter paired with Da Silva Chenin Blanc “In this series Anna Savino from Piemonte is sharing inspirational Italian recipes” My friend Anna is one busy young woman; she has a family and works in the wine industry, that means she is always on the go. Consequently, I have to fill in once in a while, like today, with an Italian recipe I have tried and enjoyed. This is one I made just last night and it was delicious. Suggested BC wine pairing: Da Silva Chenin Blanc 2018 Honey, quince and floral notes with hints of wet wool. Finishes with bracing green apple acidity. Tasting notes courtesy of @dasilvawines $22.00 available online This was one fine pairing. Loved the Chenin Blanc with the dish. The Tagliatelle was super rich and needed an unoaked, crisp white wine and the Da Silva Chenin Blanc ticked all the boxes. Smooth, and slightly fruity with just the right amount of acidity to counter the creamy pasta (yes I added a liberal amount of cream even though it wasn't called for in the original recipe, and I'm glad I did). The wine was a nice light colour but had good body and a delicious fresh taste. This one was a winner. (my notes) I received a complimentary bottle of this wine for review.
