Sunday Mood. 😌 Still feeling the new moon vibes and I have been slowing down a lot this weekend. Life is a little chaotic at the moment, big changes are in the air and I am intuitively craving rest in order to keep my balance. 😌 Hope you’re feeling good this weekend. Make today about yourself. Rest, recover and surround yourself with people who make you feel loved and happy. 💛 And if you’re in the mood to spice up your Sunday brunch, here’s to CHAI SPICED SEMOLINA PORRIDGE. ✨😋 Recipe; 50g semolina 1 chai tea bag 150ml water 100ml oat milk 1 tsp coconut sugar 1 tsp cinnamon (optional) Heat up the water and oat milk in a small pot and let the chai tea soak for a couple of minutes. Once all the flavors have been absorbed, bring chai mixture to a boil. Add coconut sugar and cinnamon and turn down the heat before adding the semolina. Stir frequently until the semolina has absorbed the liquid.👌🏼 I topped my bowl with figs, persimmon stars, slivered almonds, buckwheat, mulberries and a few chocolate chips😋🥳

Constant Chatter. ✨ Recipe below 👇🏼 My mind is giving me a hard day today. I woke up in the middle of the night and could hardly fall back asleep. I did eventually, but the second I woke up, my mind was back to running a marathon. It’s quite hard to silence the constant chatter once your focus was drawn to it. So I gave myself the time and space to ease into the day slowly and managed to hush my roaring mind. Do you want me to share what I do whenever my mind takes over? Vanilla Cashew Oats ✨ Happy Friday! 😊 How are y’all doing? Any plans for this weekend? Besides the complete chaos in traffic due to the strike of trains this morning, I am feeling good to be reunited with my Uni girls to get some work done. Haven’t seen each other in 12 hours, quite a long time huh? 😅 Howeverrrrrr, I know I kinda repeat myself by saying I love fall. But many of you seemed to love it too, so I reckon you’re in the mood for fall inspired breakfast bowls as much as I am, so here’s to this amazing bowl of glory of VANILLA CASHEW OATS. RECIPE; 60g Oats 200ml water
200ml oat milk 1 tsp vanilla powder 1 tbsp chia seeds 1 tbsp cashew cream (blend 1/2 cup soaked cashews with 1/2 tsp vanilla, splash of lemon juice and oat milk until creamy) Combine oats, chia seeds and warm water in a medium sized pot and let them soak for a few minutes. Add the rest of the ingredients and cook your oats over medium heat until creamy. ✨ I topped them with a fig, crunchy cinnamon granola and more cashew cream. Have a wonderful Friday. ✨🥰

Fall Essentials I love fall. Do you? 🍁 I surely miss the warm weather, summer dresses and long nights out with friends. But there’s something magical about fall. Banana Bread ✨ It’s been a hot minute since I’ve shared some baking inspo and to be honest, I miss baking a lot. On the one hand, I won’t let myself have the time in the kitchen and on the other hand I don’t know who to share all the baked goodies with (that’s gonna change soon tho 😋😏). So when I got some extra ripe at my organic store last week, it was quite given that I needed to treat myself to a gorgeous loaf of banana bread again. If you’re in the baking mood, give this BANANA BREAD a try! 🙏🏼 Recipe; 1 chia egg (1 tbsp chia seeds + 3 tbsp water) 1.5 cups spelt flour 0.5 cups ground tigernuts/almonds 2 tsp baking powder 1 tsp cinnamon 2 ripe bananas (+1 more to top) ¼-1/2 cup plant milk ¼ cup maple syrup 1 heaping tsp nut butter ½ cup chocolate chips (save some to go on top) Start off by preparing your chia egg, leave to sit for about 5 minutes. In the meantime, combine the dry ingredients and give it a good stir. Whisk together the wet ingredients and carefully fold them into the dry ones. Add your chocolate chips and pour the batter into a slightly greased loaf pan. Top with another banana and some choc chips before baking it in the oven at 180 degrees for about 45 minutes.✨
