Sheet pan meal prep. Simply delicious! Veggies: Cauliflower Green beans Roma tomatoes Baby Broccoli Asparagus . Fries: Red potatoes Sweet potatoes . Added a few ounces of baked teriyaki tofu👌🏼 Preheat oven to 450°F. . Direction: Chop, slice and dice your favorite veggies into bite-size pieces. . Spread vegetable mixture in a single layer on a parchment paper lined baking sheet. Drizzle with olive oil and your favorite spices. . Bake at 450°F for 35 minutes or until browned and tender, mix gently after 25 minutes. Remove pan from oven and drizzle with a bit more olive oil. Protein style veggie burgers with some infused water. Quick little lunch meal prep for the week. Pro style plant based burgers topped with tomato, red bell peppers and a slice of jalapeño. I normally make the main course and nightly I will either throw it in a tortilla, over salad, soup or a put it in a lettuce wrap. Change it up.... Rice, or zoodles if you are looking for a lower-carb option. . Sweet potato cauliflower fajitas for my meal prep this week! . Super easy Sheet pan recipe! . Ingredients * 1 large head cauliflower, chopped into bite size pieces * 1 large Sweet potato, chopped * 1 red pepper, chopped * 1 yellow pepper, chopped * 1 orange pepper, chopped * 1/2 red onion, cut into slices * 1 lime * Cilantro to taste Sauce Mix * 1 tablespoon cayenne pepper * 1 teaspoon of turmeric * 1 teaspoon cumin * 1/2 teaspoon paprika * 1 teaspoon of cinnamon (optional) * 1 tablespoon of Apple cider vinegar * 1/2 lime, freshly squeezed * 3 to 4 tablespoons olive oil * A few cracks of Himalayan pink salt and a few cracks of Black pepper Instructions * Preheat oven to 425 degrees and spray a large sheet pan with oil. You can use parchment paper as well. I actually used a silicone baking mat. * Add all spices mix to a small bowl and whisk. Set aside * Place the chopped, sweet potato, cauliflower, peppers, onions, spice mixture and olive oil in a large bowl. Mix well. * Add the mixture to the sheet pan and bake for about 20minutes, until the veggies are soft and crispy. * Serve with your favorite tortillas or veggie wraps, top with cilantro and lime you can even add some guac if that is your jam! 😆 so tasty!! 🙌🏼

. Here is a quick and easy recipe for my Cold pasta salad! Ingredients: * 16oz or 2 small boxes of pasta ( I used chickpea & lentil pasta shells) * 2 cups of Tricolored mini Heirloom tomatoes, cut into bite size pieces * 1/4 cup chopped celery * 1/2 cup shredded carrots * 1/2 a small red onion, diced * 1 small red bell pepper, diced * 1 small orange bell pepper, diced * 1 can of sliced black olives (mine was 6 ounces) * Chopped fresh basil or cilantro to taste. (Personally, I love fresh basil)🌿 * Pink Salt and cracked black pepper to taste * Dressing * 1/3 cup of olive oil (EVO) * 2 tablespoons of your favorite balsamic vinegar. (I used Heirloom balsamic) 👌🏼 * 1 Tbl Apple cider vinegar * 1/4 teaspoon of crushed red pepper * 1 teaspoon of sugar- honey or your favorite sweetener. A few cracks of salt and pepper and some freshly squeezed lemon. . Instructions: * Cook pasta according to directions to your desired doneness. Rinse, drain and let cool. * While the pasta cooks, dice up your favorite veggies. Dressing * Combined all the ingredients for the dressing EVO, vinegar, all your favorite spices and lemon. Get creative, you don’t have to follow my ingredients to the T, then whisk until fully combined and place it in the fridge. * In a large bowl, combine the pasta, chopped veggies, fresh basil, and dressing. Toss until the pasta and veggies are fully coated in the dressing. * Add some Himalayan Pink Salt and some Cracked black pepper to your liking and you are all set. * I like to cover mine and place it in the fridge for about 30 minutes so all the flavors of the dressing coat the pasta. I toss it one more time before I eat it.
