ALL YEAR ROUND HEALTHY FIGOLLI COOKIES 🤤 This, could be BY FAR one of my favourite recipes to date! 🤤 Due to the crazy circumstances @hollandandbarrettmalta and I have come up with a fun & delicious recipe you can make at HOME since we’re spending so much time INSIDE 🏠 We can’t celebrate easter with our families this year, BUT ... we CAN bake cookies! 😂🙏 Here’s how 😍 what you need to make around 18 cookies: In a bowl mix the following well till you smoothen any lumps: 500g almond flour 1/2 cup ground almonds 1tbsp baking soda 1tsp salt In a separate bowl beat & whisk the following batter: 2 eggs 170g smooth cashew butter 1/2 cup + 2TBSP of natural agave syrup 2tsp almond extract Mix wet and dry ingredients until your dough is formed. Add zest of 1 orange and zest of one lemon and stir everything together. Line your trays with baking paper & grease well. Preheat oven at 160• Place your bowl with the dough in the fridge for around 2 hours or if you’re impatient 20min in the freezer 🤪 Scoop out a spoonful to create like size balls out of your dough. Flatten into circular cookies with your fingers, palm or a flat bottom of a drinking glass. Leave at least 3cm between one and another since the cookies will expand once baked. BAKE for 15min at 160• and look at them GROW 😍 LET THEM COOL COMPLETELY 🍪 Topping: Melt 2 bars of creamy white chocolate mixed with 4tbsp of coconut oil (I used vanilla gf white chocoholic from @hollandandbarrettmalta ) Add some sprinkles and OLE’ - We have our FIGOLLI COOKIES TO DEVOUR during quarantine/isolation 😃🙏 #cookies #healthycookies #gfcookies #figolli #maltesetradition #almondcookies #baking #cookierecipe #recipe
HELLO healthy carrot cake 🥕 Naturally sweetened, loaded with carrots (vitamins) spices and crunchy toppings 🌟 Prep time: 20min Cooking time: 50min Preheat oven at 180• In a bowl, mix the following: 1cup milk (I used almond) 1 tbsp apple cider vinegar Mix and Leave to set for 15 min In the same bowl add and whisk: 2 large eggs 2 small apples in purée OR 2 mashes bananas 1/4 cup agave or maple syrup 1tsp vanilla extract In a separate bowl mix the following: 1/2 cup coconut or brown sugar 1 1/2 spelt flour or all purpose flour 1/2 cup almond flour 1 tsp baking powder 1 tsp baking soda 1 tbsp cinnamon 1/2 tsp nutmeg 1/4 tsp pink salt or table salt ADD and mix everything in one bowl Add 1 1/2 cups grated carrots and stir Place the mixture in a greased, lined tray and bake for 50min at 180• Frosting: Chill 1 can of full fat coconut cream Whisk this with 2 tsp of sugar (I used stevia which is a healthier option) Top your carrot cake once it’s COOLED DOWN 🤪 Add toppings of choice! But, I chose a different way of thinking and a different approach to WHAT I should really be focusing on. I’ve been working on my MINDSET for too long to let this effect me to a point where I lose myself. I choose to love myself NO MATTER WHAT. When a failed cake turns into the most DELICIOUS double chocolate strawberry BROWNIE 😂 🤤 You have to make this! So YUM! Preheat oven at 160• Grease and line your baking dish/tray In a bowl mix the following: 2 1/2 cups of flour (I used oat) 1 cup cocoa powder (I used valor) 2 Tbsp baking powder 1 Tbsp baking soda Pinch of salt 1/2 cup coconut sugar or sugar of choice Beat 2 large eggs in a separate bowl and add: 1 cup of Milk (I used coconut) 1/2 cup melted butter or coconut oil 1/2 cup honey or agave 2 Tsp vanilla extract 1 Tbsp chia seeds 1 cup boiling water Mix & Pour both mixtures in a blender Blend & Pour the combined mixture to your lined dish 💫 Bake for 30min at 175• Let it cool. 🍓 Chop your strawberries as a topping. Melt your chocolate 🤤 I used Valor melting chocolate and it only needs 4 min in total. 2 min, stir and in for another 2 min. Pour all over the strawberries and cake 🍫 Coconut sprinkled as a topping (optional) Let it cool 😎 or refrigerate for 15 min. UPON REQUEST 😂 U la qegħdin kwarantina iddeċidejt nesperimenta! A cake packed with Vitamin C with NO EGGS, NO NUTS & NO BANANAS 😂😂🙏 - Line your loaf pan or dish with baking paper. - Preheat oven BLEND: 2 1/2 cups flour- I used rice flour 2 tsp baking powder 1 tsp baking soda Pinch of salt 1/2 cup coconut sugar (or any sugar or sweetener of choice) ADD & BLEND: 1/2 cup melted coconut oil (healthiest option) or melted butter of choice 1 cup milk of choice (I used oat) 1tsp apple cider vinegar 1/3 cup apple puree (boil 2 peeled apples) 1/2 cup orange juice (go fresh!) - Pour the mixture into your lined baking dish. - Add and stir a handful of dried cranberries & a pinch of orange zest evenly to the mixture. - Top with a few more cranberries & orange zest 💫 - Bake for 30min at 180• Most of the ingredients delivered at home from @dicalhouse 🥰 ENJOY! 😍 LET’S QUARANTINE TOGETHER HIIIII 🥰 #recipe #vitamincake #healthycake #yum #dessert #cranberrycake #orangecake #quarantine #covid19 #hobbies #lifestyleblogger
