It would only be natural, therefore, to have a first pressing, which is called the primera yema obtained from this separation process with free run juice, light pressure on the pressed grape, from which we obtain a must which, after the alcoholic fermentation process, has characteristics which is classified as / and /´. The second pressing (segunda yema) gives proportions of must obtained from greater pressure, which would thus have greater contact time with the grape solids. Notes of Liège pear syrup and caramelized peanuts, Cinnamon, Molasses and toffee. Some dried figs and dates, with brighter hints of orange zest. Subtle hints of old oak and coffee as well. In the mouth beautifully rounded and oily, very smooth, with a nice acidity. Truffle paired with dark chocolate, sweet spices and woody flavours. Absolutely dry with a very long finish. Pale to mid strawy gold with golden highlights. Much more intense and completely different to the 2010. Dry and ripe with strawy, biscuity almost baked sour dough notes and aromas of toasted almond mingling with gently bitter flor and a faint buttery, slightly autolytic character. Again much fuller, very dry and a little more mature tasting, despite being a year younger, with intense nuts and more bitter flor and that teasing slightly oxidative note. It has terrific length. Interestingly it is one degree lower in alcohol when one might expect the reverse being from a hotter year. González Byass is one of Spain's most well-known sherry bodegas. Its origins can be traced to 1835 when it was founded by Manuel María González Angel, who was subsequently joined by his English agent, Robert Blake Byass. The business was further expanded by the second generation of the González family, amongst them Manuel Críspulo González y Soto. The González family assumed sole control of the business in 1988.
