I’m calling this trip to Greek my comeback tour. Two years ago exactly, I miscarried on the plane to Athens. I spent what was supposed to be a much needed vacation in the hospital after an emergency surgery that both threatened my life and left me enamored with this country and it’s incredibly caring people. Today I sat by the sea with our little Red sleeping in my arms, and thought, “this right now is the best moment of my life.” Plus, the grilled octopus is off the chain. People always ask me, “what’s your favorite salad.” Apparently it’s a Greek salad, made by a grumpy lady in a beach shack on Hydra. (8th Greek salad in three days).
Why do my picnics always cost twice as much as a restaurant meal? First breakfast on Hydra, went to three different markets and a bakery to find all my favs — sheep’s yogurt, pink pistachios, figs, that big circular sesame thingy (koulouri), and tomatoes with farmers cheese.
#QUINCE !! Since everyone at my dinner party the other night kept mistaking these #quince for pears, seems they are worthy of a post...A tannic Fall fruit, quince is covered in a downy fuzz, and gives you cotton mouth when raw. The white flesh transforms into a warm rosy pink when stewed, suddenly fragrant and tart. I serve it savory and sweet. Here I baked them in tart #verjus, water, a little sugar, pink peppercorn and bay leaves, and served them with radicchio and walnut salad. Make sure and reduce that cooking syrup down and use it to glaze the cooked fruit.
I’m always looking for new ways to use salty, funky #preservedlemon. SHAVED CARROTS W/PRESERVED LEMON + TOASTED SPICES. • 3 medium carrots • 2 tsp preserved lemon paste • Juice 1/2 lemon • 2 tsp olive oil • 1/4 tsp coriander seed • 1/8 tsp cumin • 1/8 tsp caraway seed • 1/8 tsp Aleppo pepper • Use a Y peeler to shave carrots into thin ribbons. Stir lemon paste and juice together, and whisk in olive oil to emulsify. Toss the carrots w/dressing. • Toast coriander, cumin + caraway seed. Crush in mortar + pestle. Toss w/ carrots + finish w/ Aleppo.
I’m calling this the Tony Tomato Salad. Minced and fried in olive oil: jarred peperoncini, olives, capers, lemon zest + garlic until crispy. Spooned it warm over a #greenzebra and finished w/ syrupy balsamic + basil. Something about the warm oil on that tomato... 🤪 @tonyshure o
Tomato as vehicle for all the salty, briney delicious things...I just chopped up olives, + banana pepper, and fried them with capers in @libelluladopt olive oil. added garlic at the end just to get it golden brown and crispy. Poured that (oil and all), over a salted tomato, finished with balsamic + basil and BAM.
Tap twice if you’re impressed that I made this with one hand (and a baby the other). Vietnamese noodle salad with sliced steak and so many herbs from the garden. I love a Vietnamese #nuoccham inspired dressing, I make mine with lime juice, fish sauce, chile, honey, garlic and a little rice win vin.
