💯 Sabrina Goldin and Stéphane Abby’s Carboni’s in the Marais is ridiculously good. Rich savory handmade pastas like this 1.) one big pasta sheet w/braised oxtail, mimosa egg mayo-lemon foam 2.)long raviolo with creamy blue cheese stracciatella & chili sauce 3.) lamb anolini & yogurt are just a few of the savory dishes they’re doing… and don’t even get me started on their veal milanese w/beurre noisette, capers, anchovies & lemon zest. The vibe is young and buzzy, the room is understated with candles while tilted mercury mirrors add glam. Perfect for date night or groups of friends. 🍷The natural wine list is deep too, with stunners like vintage Beru. 🥃After dinner head downstairs for craft cocktails at their Bar Sotto to drink under period brick vaulted ceilings and dance to their vinyl juke-box. 🫶 Chef Sota and I have known each other for such a long time (way before Clown Bar.) A meal here makes me think of so many chef friends in Paris who came here from a faraway place…watching them arrive unknown, without friends, without a language, only a visa, a suitcase and a dream, then found their path without giving up… they grew and become entrepreneurs and consider themselves French chefs, rightly so. To pigeon-hole them as Japanese, or Mexican, Italian or American… not truly fair because the journey they’ve risked away from their home & family to endure & thrive is incredible. They are now French chefs. Part of a Paris family. Sota’s restaurant is Maison simply because he wants everyone to feel at home, with every seat, part of the heart of his home, his kitchen. Tonight we were all together. A kitchen team, clients who were strangers, and then friends. A team that shows up every day and puts in the work perfecting technique, flavors - everything in their craft. People who crossed town, oceans and continents to be here. And Sota’s courage to bust out of his Clown Bar menu so good no-one would let him change it. Now here we are. Rare for Paris, he cooks in a wood burning oven, its embers transferred to an Extebarri-esque grill. Its been a long time since I’ve been in because to be quite frank, I haven’t been in the mood for fine dining since Covid. Tonight I wanted to see my friend but in fact, it reminded my why I fell in love with restaurants and hospitality. Seeing a team work together seamlessly balanced with direction from a leader, and, laughter and camaraderie that goes from the kitchen to each guest’s face and experience blew me away. I simply forgot in our immediate gratification world of popups and social media what it means to be brave & constant. Highlights: smoked peas & caviar, Brittany lobster poached in butter, and a three hour indirect heat smoked Pyrenees trout with a texture like cream. Chef Adam Purcell is Early June’s current chef-in-residence. Irish-born, Adam is my long time friend who worked at 🌟 Frenchie before joining Matt Orlando’s AMASS team in Copenhagen. The last few years it was a must to visit him there, learning about sustainability and latest fermentation discoveries. While precision cooking has always been his forté - his time at Amass bringing produce direct from their garden to the kitchen utilizing a zero-waste ethos and mostly 🌿 produce, plants & seafood - Adam’s menus are delicate, powerful and flavorful. He’s made his move back to Paris and his first week at Early June was a packed house night after night. "This experience is insane, so many people! I am loving it!" - what Adam said when he hugged me at the door. 👉 Slide in to his last week there (on Early June’s site if you are more than 4ppl), otherwise its a first-come first-served basis. 🚀 Pro Tip: Parisians eat dinner at 8-9pm and enjoy their meal for hours. If you "walk in" at 8-9pm there isn’t much chance of finding a free seat. I always say for the ‘no reservation’ places: Go early, go late, but in the middle you’ll probably wait. Early June is a vibrant buzzing wine bar, service is sharing plates on the table as they are ready. 🍝 One of the most enjoyable memorable meals in recent months - hours that passed at Early June without knowing it, words on a menu I didn’t recognize, handmade dishes and flavors created by a Chef I’ve never met, shared with new friends and the only photos taken until the last two courses of seven when we realized we’d been eating with gusto and simply didn’t think about photos.
