🥒 CUCUMBER AND BEETROOT SALAD…Made by @gayanefood * 300 g cooked beetroot, sliced * 2 small cucumbers, sliced * 1 red onion, sliced * 1 tbsp chopped dill * 1 tbsp chopped parsley * 1 tsp nigella seeds (optional) * Handful of mixed salad leaves * Feta cheese (optional) Dressing * 30 ml olive oil * 1 tbsp white wine vinegar * 1 garlic clove, crushed * Salt and pepper In a large bowl, combine all the ingredients. Meanwhile, whisk olive oil with vinegar and garlic. Season dressing to taste with salt and pepper. Combine with the vegetables and mix well. Top with salad leaves. thai inspired peanut crunch salad ingredients: - 1 cup of arugula - 1/2 cup shredded carrots - 1/2 cup shredded red cabbage - 3 medium cucumbers, chopped - 1/3 cup chopped green onion - 1/2 block of tofu, cubed - 1/2 cup edamame - 1/2 cup dry roasted peanuts - 1 cup cooked quinoa add everything to a large serving bowl, then top with the dressing creamy thai peanut dressing: - 1/2 cup creamy salted peanut butter - 1/4 cup coconut aminos (can use soy sauce) - 1/3 cup rice vinegar - 2 tbsp sriracha - 1/3 cup maple syrup - 1 tsp ground ginger - enough water to thin pour over the salad and toss to combine. this tastes best when it sits for an hour or even overnight, giving the veggies time to absorb the dressing! serve cold and enjoy :) . 🥗 HIGH PROTEIN LENTIL SALAD 🥗 INGREDIENTS ▪️1 1/2 cups cooked lentils ▪️1/2 cucumber, finely chopped ▪️1 red pepper, finely chopped ▪️1 small red onion, finely chopped ▪️2 large carrots, diced ▪️1/2 cup tomatoes, finely chopped ▪️1/4 cup of vegan feta or dairy feta, and more for topping (optional) Dressing: ▪️1/4 cup olive oil ▪️2 tablespoons fresh lemon juice ▪️1 teaspoon maple syrup ▪️2 cloves garlic, minced ▪️Large handful of coriander, finely chopped ▪️Salt and pepper, to taste METHOD ▪️Chop up the salad ingredients, and add them along with the lentils to a large bowl ▪️In a separate bowl, mix the dressing ingredients together. ▪️Pour dressing over salad and mix very well. ▪️Crumble over feta and enjoy . This rainbow noodle salad is a must make this summer ☀️ 🌈 Ingredients: 1/4 red cabbage finely sliced 1/4 white cabbage finely sliced 1/2 cucumber cut into matchsticks 1 carrot shaved into ribbons 1 red pepper cut into matchsticks 3 spring onions, finely sliced 20g coriander, roughly chopped 1 handful dry roasted peanuts 200g noodles (your favourite style/brand - I use Sharwoods) Dressing: 2 tbsp peanut butter (I use @manilife_ deep roast) 2 tbsp soy sauce 1 lime juiced 1 tbsp rice vinegar 1 tbsp sesame oil 1 tsp crispy chilli oil Method: Get your noodles on - follow packet instructions of whatever you’re using. Prep your veg! It’s ultimately up to you how you do this - I find long strips of things the best way of combining with the noodles. Feel free to use whatever crunchy veg you enjoy! Whisk up the dressing with a splash of warm water to help loosen if needed. Toss everything together. Serve with chicken, tofu, prawns or as it is, with the crushed peanuts on top and some extra chilli oil. . Credit: @whosyumami

CHICKEN CAESAR WRAPS I have been on the hunt for a solid Caesar wrap and decided to stick to making them at home because I’ve been disappointed. I think the key to a solid wrap is crunchy croutons and lots of dressing! 1 wrap of choice 2/3 head of romaine lettuce 1/4 cup caesar dressing of choice (I used Trader Joe’s vegan caesar, extra dressing is key) 3 tbsp fresh shredded parm 1/4 cup crushed up croutons 2 chicken thighs seasoned with: * paprika * garlic powder * onion powder * dried oregano * cayenne pepper * salt & pepper * A pinch of tapioca flour or cornstarch (for crispness) Sauté over medium heat with avocado oil for 3 mins on each side until fully cooked. 1. Add cooked chicken, lettuce, cheese, crushed croutons, and dressing to a bowl and mix together 2. Heat up wrap for 30 seconds to allow it to fold easier 3. Add mixture to inside of wrap and fold 4. ✨Roasted Tomato & Balsamic Toast✨ This is one of my favorite toast combos of all time😍 This toast is such a great snack or lunch option🥰 ✨Ingredients 2 slices of bread olive oil 1 cup of cherry tomatoes 1 clove garlic 1/2 small onion balsamic vinegar flakey salt pepper arugula (or basil) vegan ricotta balsamic glaze (optional, but encouraged!) ✨Directions Preheat the oven to 450*F/ 230*C. Wash the cherry tomatoes. Line a baking tray with parchment paper, then place the tomatoes on the tray. Also, add the minced garlic and chopped onion. Drizzle them all in a generous amount of olive oil, and some balsamic vinegar. Sprinkle salt and pepper. Bake them in the oven for 15-20 minutes, until the tomatoes have fully softened. While the tomatoes are roasting, slice 2 pieces of bread. Drizzle them generously in olive oil, then cook them in a pan over medium heat until both sides are golden brown. Rub a clove of garlic on the warm bread for some amazing garlic bread taste. Spread the vegan ricotta on the toasts, and top with greens of choice. I didn’t have basil so I used arugula, but I recommend either! Top the greens with the roasted tomatoes and drizzle balsamic glaze. Slice and enjoy! . Southwest chicken salad with chipotle ranch dressing * 2 chicken breasts, baked and cut into bit sized pieces * 2 hearts of romaine, chopped * 1 cup black beans * 2 ears of corn, cut off the cob * 1/2 cup cherry tomatoes, halved * 1/4 bell pepper, sliced * 1/4 poblano pepper, sliced * 1 avocado, diced * Handful cilantro Chipotle ranch dressing: * 1/2 cup nonfat plain greek yogurt * 1 teaspoon garlic powder * 1/4 teaspoon onion powder * 1 teaspoon fresh lemon juice (or can sub apple cider vinegar) * 1/2 teaspoon dried dill * 1/4 teaspoon salt, plus more to taste * 3/4 teaspoon chipotle chili powder, or sub a few dashes of chipotle tabasco hot sauce * 2 tablespoons water to thin dressing For the dressing: 1. Add all ingredients to a bowl or a mason jar and mix until well combined. If using a mason jar, you can simply put the lid on and shake the jar until well combined. Dressing serves 4. For the salad: 1. Add all ingredients into a large bowl and toss until combined. Drizzle with desired amount of dressing and toss again until fully coated. 2. Enjoy! If prepping: Toss all ingredients except dressing and place into meal prep containers, store dressing on the side and mix together when you go to eat it. .
