🌱 Baked sweet potatoes loaded with tandoori spiced chickpeas and easy guacamole. . Chickpeas: Drain and rinse 1-15oz can chickpeas. (Optional: Toss chickpeas in a little olive oil before adding the spices.) Rub chickpeas with generous amount of tandoori masala seasoning, or substitute with other spices/herbs like smoked paprika, ancho chili, chipotle, cayenne, garlic powder, cumin, chili powder, turmeric and make your own combo. Add salt to taste. • Roast at 400F / 200C until crispy (about 20 minutes). Use fork to remove a little of the center of 3 baked sweet potatoes (sliced open) and load with chickpeas. • 🥑 Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. WATERMELON FETA SALAD 🍉 By @sailor_bailey ~ Ingredients: 4-5 cups cubed seedless watermelon ¾ cup chopped feta or goat cheese 1½ cup chopped cucumbers 1½ tbsp chopped fresh basil 1½ tbsp chopped fresh mint 2 tbsp olive oil 1½ tsp fresh lemon or lime juice fresh cracked pepper optional ~ Instructions: In a large serving bowl add the watermelon and cucumber together. Whisk the lemon/lime juice together with the oil and drizzle it over the salad.Mix together. Add in the fresh herbs and feta. Gently mix it together to keep the feta from crumbling too much. sprinkle with fresh cracked pepper before serving!

Sushi sandwich 🍙 anyone?😋🥪 _________________________________________ RECIPE: 300g sushi rice 200g tempeh 2 Tbs rice vinegar 3 Tbs coconut blossom sirup Lemon juice Beetroot Carrot Nori sheets Cilantro Cucumber Other ingredients you like Sticky peanut sauce (exact recipe is in my ebook as part of the “summer rolls” recipe) _________________________________________ Cook sushi rice according to instructions, then mix in 2 Tbs rice vinegar and 3 Tbs coconut blossom sirup. Grate the carrot and mix it with some lemon juice to avoid oxidation. Grate the beetroot and mix it with 1 Tbs lemon juice and 1 Tbs coconut blossom sirup. Cut cucumber as you wish. (I like thin strips) Fry tempeh in some coconut oil and put aside. Place some rice on a nori sheet, then layer with cilantro, tempeh, sticky peanut sauce, beet “slaw”, carrot and cucumber. Finally, place some more rice on top. Wrap the sides around and cover in cling foil for a few minutes. MINI HAZELNUT PANCAKES 🥞❣️ Ingredients:👇🏻 ❣️1/2 cup self rising flour ❣️1/2 cup oat flour ❣️1 tsp baking powder ❣️2 tsp cane sugar ❣️pinch of pink Himalayan salt ❣️1 tbsp hazelnut butter ❣️1 cup hazelnut milk ❣️1 tbsp apple cider vinegar ❣️1 tsp vanilla extract Mix dry ingredients, mix all wet ingredients. Add wet into dry, mix well to combine and let the batter set for a few minutes before cooking. Add about one tbsp of batter per pancake onto a heated non stick pan. Cook 1-2 min on each side. Serve with whatever you love. Mine are topped with blueberry soya yogurt, chia-raspberry jam, hazelnut butter, chocolate, kiwi, kumquats, blueberries, raspberry, pomegranate seeds, star fruit. 😋 .
